This recipe really delivers a nutritional punch. It provides 30% of the FDA's daily protein and iron requirements, as well as more than 300% of our vitamin C needs, thus enhancing our body's ability to absorb iron—quite a bonus. It is full of fiber and provides 25% of our daily folate requirement. Folate is an important nutrient for pregnant moms. Last, but not least it's creamy and delicious.
