Banana and Caramel Dream Smoothie photo by Joanna StevenFeaturing creamy, nutritious bananas and natural caramel-like flavors, this delicious smoothie is truly dessert in a glass! Yet, when was the last time your sumptuous dessert contained generous amounts of fiber, vitamins (B1, B2, B3, B6, B9 & C) and minerals (selenium, potassium, copper and magnesium)? To top it off, this recipe is very quick to make if you have Brazil nut milk already prepared, and is both filling and satisfying!

Ingredients (serves 2)

  • 2 cups Brazil nut milk or other nut milk

  • 1/4 cup dates

  • 1 Tbsp coconut oil

  • 1 inch vanilla bean

  • 2 Tbsp maple syrup or agave nectar

  • 3 frozen bananas

  • 1/2 tsp yacon powder, or more to taste

  • 1/2 tsp lucuma powder, or more to taste

  • A pinch of salt

  • Yacon syrup to drizzle

Directions

  • Blend everything but the yacon syrup, and pour into 2 large glasses.

  • Drizzle a little yacon syrup on top, and serve.

Eco Tip

Unplug appliances when not in use. Your electronics—computers, TVs, phone chargers—use energy even when they're turned off. Stand-by power can account for as much as 20% of home energy use. Save both energy and money by unplugging your devices, or put them on a power strip that you can turn off when they are not in use.  More tips...

How long can men thrive between walls of brick, walking on asphalt pavements, breathing the fumes of coal and of oil, growing, working, dying, with hardly a thought of wind, and sky, and fields of grain, seeing only machine-made beauty, the mineral-like quality of life?  - Charles A.
